I apologize for rushing you. How was ramen?
That ramen shop was very popular .

One day, I'd like to visit India.

Sugoiiii! Nice English, only a few minor mistakes.
I just think that 'visiting' will sound more like he/she was your guess, but 'seeing' is like staring, just didn't sound good to my ears ^^

You couldn't say 'one' as an antecedent of 'children', because 'children' is plural.

Hope you can fully understand my points, sorry if there were any mistake ^^

The last sentence would mean she is still in Japan. If she has left Japan and you are sending this to her at her home, " Hope you had a nice stay in Japan!" would replace that.
