  • In there, we can watch squirrels, rabbits and wild fowls.
  • (I would join this sentence with the first, so...) Near my apartment there's a river and lush nature where you can see squirrels, rabbits, and wild fowls. (I noticed you used "watch", this is fine but it implies you are watching them for a reason. Therefore, it might be better to put more detail into what the animals are doing. E.g. ~you can watch squirrels and rabbits flying about, and wild fowls flying through the trees. Also, you wrote "we can watch", but if it's an activity that anyone can enjoy it's more natural to say you. In English "you" is used much different to Japanese's あなた, 君 etc.)

  • Near my apartment there is a river and a lush nature. (note, it's more natural to just say "my apartment" than "the apartment where I live", although the latter is grammatically fine. Remember, a river runs, but usually the noun "river" implies "running" so the verb is not needed.)

You can only say "fishes" when you are talking about many different species of fish. Using "since" here sounds unnatural. You use "since" when the cause is obvious 当たり前. In this case the cause is not 当たり前 so you should used "as"...) As there are a lot of turtles and walleye fish in the river, I come across many people who are fishing when the weather is good.
