Hakata ramen is one of the most famous cuisines of Hakata(Fukuoka), including mizutaki and gameni(Chikuzen-ni).

Ramen is a Japanese noodle dish consisting of regular wheat noodles, which is usually sharp and kinky, in a soup usually flavored with miso or soy sauce, and served with various ingredients, typically kamabokos, an egg, sliced meats and thinly-cut spring onions. Ramen is different from other types of Japanese noodles; udon and soba, in that it is made of regular wheat whereas udon is made of strong flour and soba buckwheat flour. Also, ramen has its origin in China. It is unclear when it was brought into Japan, though surely it was already there in Japan before the beginning of 20th century.

Among other types of ramen from many other regions in Japan, what is special about Hakata ramen is its soup and noodle. The soup of Hakata ramen is tonkotsu soup(poke bone soup), which is made by simmering poke bones for hours and getting collagen dissolve into the soup. It is converted into gelatin and makes the soup taste mild. As for noodle, Hakata ramen's straight noodle and kaedama system, which offer additional balls of noodles for less price, is peculiar .
