I just want to ask someone that can I skip "today" in this sentence.
It was a happy day today.
I leanred this sentence in my high school. But the word of day already explain "all day long" ?

I think "... in high school." sounds better here

If someone said "It was a happy day." I would think "When?"
You can say "Today was a happy day."
English is usually very specific compared to Japanese.
We put "I" and "is/was are/were" in many sentences, even though in Japanese you don't need these words.

I was happy day today.の一文だけの場合はtodayが要ります。それが無いと”いつ”のことか分からないから。でも、前後関係でdayがtodayとはっきり分かる時は、省略可なのだと思います。

It depends on context. If you come home and say "It was a happy day," then people will assume you mean today. Or, if you're talking about a memory, they will assume its the day of the memory. You can leave out "today" whenever it's clear from context which day you mean, and it usually is in English!
