My first letter in Japanese to my imaginary host mother.

Any help in this would be much appreciated.
NOTE: No Kanji I don't know any yet, thanks.
Firstly should I address a Japanese host mother that I haven't met yet as 'おかさん’ or with her surname?
Is 'おかさん’ to overly friendly for someone I haven't met?

I plan to eat sushi, ramen, tempura, and lots more in Tokyo.
らいげつの 20にちに にっこに おんせんを いきます。
On the 20th next month I'm going to a hot spring in Nikko.
