1) What is the difference in 能 and 能够？Almost the same. So, just use 能.in some situation, 能够 might sound strange when you speak

2) 想 means "think" and 要 means "want". 想 can also mean "want" and 想要 means "want" again.

Why can't I just say, 我要苹果。It's correct. But it's only used by children. In some other situation, you can use 我要. e.g. 我要周游全世界。But it's still sounds not so mature.

I have been saying 读 by itself. No, 读 and 阅读 are almost the same. But 阅读 is more formal. Just use 读 in speaking.
