The order and how to use particles are not good.
my coffee: 私のコーヒー
a bit bitter: ちょっと苦い/少し苦い
For example,
I like my coffee. 私は私のコーヒーが好きです。
"が" used here is important.
This means an object is before it.
If you don't use it, we may not understand what you like.
And,
"my coffee a bit bitter" means "少し苦い私のコーヒー".
This is a noun phrase, which is a "like"'s object.
私のコーヒーはちょっと苦いのが好きです。(この文の場合「私のコーヒー」という言い方はあまりしないと思います。）「私のコーヒーはちょっと苦いのにしてください」などのようには言います。
