I could get what you mean, but you need a particle for the subject to make the sentence sound right.

Same here. The sentence is sort of alright to give an idea but sounds awkward. Particles( In this case '가' and '로') are the very essential part of Korean grammar.
나중에 나머지 리그가 개최될 거예요.
I'm being a bit picky but 나머지 is better than 여분의. Can't explain exactly why but to me, 여분의 sounds more like 'spare' while 나머지 means 'extra'.
삼 주 전에 휴가가 있어서, 그때 또(역시) 얼티미트를 안 했어요. (하지 않았어요.)
*There are two way of counting in Korean. In this case 삼 is used rather than 셋(or 세).
*가 and also 이 are used for subject but since there's no 받침 on the last letter which is 휴'가', we use 가 instead of 이
*What I put in the bracket are what make the sound better. your sentence is grammatically right but sounds rather childish now. xD

'~ 번 이나'는 '취소되었어요' 를 강조해줘요. 보통 두 번 이상일때 쓰면 자연스러워요.
삼 주 전에 공휴일이 껴서, 그때도 얼티미트를 하지 못 했어요.

Particles are difficult for foriegners. '은,는,이 or 가' is used for subject as you know. When the last letter of the word has a final consonant, you add '이'. Otherwise, you add'가'. '그' of '리그' DOESN'T HAVE final consonant, so you add '가'. For example, '임' or '게임' has final consonant, you add '이' so it is '게임이'.

Just 두 번 is fine.
나중에 나머지 리그가 개최될 거예요.
Also, you sometimes see '잔여 경기' for extra games in the sport news article, but it sounds formal. 취소된 경기(cancelled game) or 연장된 league(delayed game) can be used.

It's rainning here in Korea so many base ball games were cancelled.
When league was cancelled, did it mean that the whole games were cancelled or some of the games were cancelled?
연기된 리그/연기된 경기 or 취소된 리그/취소된 경기 is correct for your sentence.
