この学期は僕達のさいごの日本語のクラスだから、先生に短いありがとうの手紙を書きたい。書くのに手伝ってくれ。
「先生：子供の時から、いつも日本語が好きだった。育ちながら日本語を習いたかった。UCFが日本語のコースがあったを見つけたときに、本当にうれしかった。さいごの二年間にあなたは日本語の読み方と書き方と話し方を教えてくれた。あなたも僕が質問があったら手伝って、留学の申込書を手伝って、日本に行く事について僕と勧告している。あなたにたくさんたくさん習って、今 [I'm on my way to learning more thanks to you.] あなたを鼻を高くしたい。本当に、心の底から、ありがとう。」

"Sensei: Since I was a boy, I always liked Japanese. I grew up wishing to learn Japanese. When I found out UCF had a Japanese course, I was truly happy. Over the last two years you have taught me how to read, write, and speak Japanese. You have also helped me every time I had questions, helped me with my application for study abroad and given me advice about going to Japan. I have learned so much from you, and now I'm on my way to learning more thanks to you. I want to make you proud. Truly, from the bottom of my heart, Thank you."

Even my translation is a little bit unnatural Japanese.
By that, I meant that thanks to her, I can continue to study and learn more Japanese. Like, "I can (and I will) continue to improve my Japanese thanks to you"
You could say 先生のおかげで、これからも自分の日本語をよくしていくことができるだろう（できると思う）。
質問した時は教えてくれ、留学の申込書を手伝ってくれ、日本に行く事について僕に勧めてくれた。
