When I make dinner for my family, and my roommates were in our house, we can eat dinner together. Sometimes, I would like to ask them, “食べますか?“. I’m not sure that they like the Japanese food, so I don’t want to force them to eat it. Could I say “Go ahead” or “Please have some”?

If you would like for them to eat *with* you and your family (perhaps at the table), you can say something like 「Would you like join us? 」

If you say something like 「どうぞ」 I think it would be like
「Help yourself if you would like something to eat / Please help yourself..」 but it doesn't have the same direct feeling of allowing them to directly eat with everyone.

Long time no see. Nice to see you, With.

I like your sentence. "Would you like join us?" I will use it at next chance.
"Help yourself" is maybe near my feeling.
