退屈な？中学生でない相手と話せば良かった気が。。。//退屈な中学生でない相手 is grammatically correct and 100% comprehensible, but unnatural.
退屈な中学生と*は*話さなければ良かった is better.
暇な中学生とは話さなければ良かった is even better.
However, the situation is still rare in Japanese (not in Japan). I know the meaning will change, but the following is more natural.
中学生のような退屈な奴とは話さなければ良かった
暇な中学生なんかとは話さなければ良かった is very natural.

英会話の勉強をスカイプでしようと思ったのですが
I tried to practice English conversation using Skype,
時間の無駄でした。
it was wast of time.
別の方法が見つけられるといいんですが。
I wish I can find another way.
That's a shame. I think it might be better to have Skype conversations with people you already know, even if they're only online friends. I've done it myself with people I know from lang-8. When you have similar interests and personalities to each other, it's easier to choose a topic and keep the conversation flowing, I think.
